Base & Liquid

Method

Preparation (both smoothies)

  1. 1

    Chill & Cook (if needed)

If using cooked taro root or purple sweet potato, ensure they are cooked, mashed smoothly and cooled to room temperature before blending. If using tapioca pearls (boba), cook according to package instructions, rinse briefly under warm water, toss in a teaspoon of sweetener and set aside in a small bowl.

  2. 2

Measure out all ingredients and have your blender and measuring tools ready. For matcha, sift the matcha powder into a small bowl to avoid clumps.

Tarro (Taro) Milk Smoothie

  1. 3

    Assemble and Blend

In a blender add 1 cup milk, 1/2 cup Greek yogurt, 3 tablespoons taro paste (or taro powder), 1/2 cup cooked purple sweet potato (if using), 1 cup ice, 1 tablespoon liquid sweetener, and 1/4 tsp vanilla extract. Blend on high for 30–45 seconds until completely smooth and creamy. If texture is too thick, add up to 1/2 cup additional milk and pulse to combine.

  2. 4

    Taste and Adjust

Taste the taro smoothie and add more sweetener if needed (up to another 1 tablespoon). If color or taro flavor is weak, add an extra tablespoon of taro paste/powder and blend briefly.

  3. 5

    Finish and Serve

Divide the taro smoothie into two serving glasses (about 12–14 oz each). Top each with 2 tablespoons cooked tapioca pearls if desired, a tablespoon of whipped cream, and a drizzle of condensed milk or taro drizzle. Sprinkle crushed graham cracker or toasted coconut on top. Serve with a wide straw.

Matcha Milk Smoothie

  1. 6

    Bloom the Matcha

In a small bowl, pour 2 tablespoons hot (not boiling) water over 1.5 teaspoons matcha powder and whisk briskly in an 'M' motion until frothy and no lumps remain. If using spinach, briefly pulse it in the blender with 2 tablespoons milk first to break it down smoothly.

  2. 7

    Assemble and Blend

In the blender add 1 cup milk, 1/2 cup Greek yogurt, the bloomed matcha, 1 cup ice, 1 tablespoon liquid sweetener, and 1–2 tablespoons spinach puree (if using). Blend on high for 20–30 seconds until vibrant green and smooth. Add up to 1/2 cup more milk if you prefer a thinner consistency.

  3. 8

    Taste and Adjust

Taste and add more sweetener if desired (up to another 1 tablespoon). For a stronger matcha flavor, add an additional 1/2 teaspoon matcha powder dissolved in a splash of milk and blend briefly.

  4. 9

    Finish and Serve

Pour the matcha smoothie into two serving glasses. Top each with a dollop of whipped cream if desired and dust lightly with extra matcha powder. Add boba or toasted coconut if using. Serve immediately.

Notes & Storage

  1. 10

To make single-serving adjustments, halve the ingredient quantities for one glass. Smoothies are best consumed immediately but can be refrigerated in an airtight container for up to 24 hours; stir or re-blend before serving. If prepping components ahead, cook taro/purple sweet potato and tapioca pearls in advance and refrigerate separately.
