    Make orange sugar syrup

    In a small heatproof bowl or measuring cup, combine the granulated sugar and hot water. Stir until the sugar has fully dissolved, creating a clear syrup (about 1–2 minutes). Add the finely grated orange zest to the warm syrup and stir to infuse for 5 minutes.

    Strain and cool syrup

    After the zest has infused, strain the syrup through a fine mesh sieve into a clean container to remove the zest solids. Discard the solids. Allow the syrup to cool to room temperature (about 10–15 minutes). Cooling shortens carbonation loss when mixed.

    Combine citrus components

    In a mixing jug, combine the fresh strained orange juice (remove pulp if you prefer clearer soda) with the fresh lemon juice. Stir in the optional citric acid if using. Add the orange extract if you want a brighter, more concentrated orange flavor. Taste to check balance: it should be sweet-tart with pronounced orange.

    Sweeten and adjust

    Add the cooled orange sugar syrup to the citrus mixture. Stir well and taste. If you want a deeper orange color, add a single drop of orange food coloring and stir. Adjust sweetness by adding more syrup (in 15–30 ml increments) or more lemon/citric acid for tartness.

    Chill carbonated water

    Ensure the carbonated water is thoroughly chilled—cold water retains carbonation better and prevents foaming during mixing. Do not shake once combined.

    Assemble soda (to preserve fizz)

    In a large chilled pitcher, measure the carbonated water. For 1 liter final volume, pour about 900 ml chilled carbonated water into the pitcher. Slowly pour the citrus-syrup mixture (about 100 ml) down the side of the pitcher into the water to minimize foam and loss of carbonation. Stir gently once or twice with a long spoon—do not vigorously stir.

    Taste and top up

    Taste the soda. If you want a stronger orange flavor, add a small additional amount (15–30 ml) of the citrus-syrup mix, adding a little less carbonated water if needed to keep volume ~1 liter. If the soda tastes flat, top up with extra chilled carbonated water; if too sweet, add a squeeze more lemon juice.

    Serve

    Fill serving glasses with ice if desired. Pour the assembled Fanta-style orange soda over ice. Garnish each glass with an orange slice or twist. Serve immediately to preserve carbonation.

    If not serving immediately, transfer the soda into a sealed bottle and refrigerate. Consume within 24–48 hours for best fizz; open gently to reduce foam.
