For the edamame

Method

Prepare and cook edamame

    If using frozen edamame, no need to thaw. Bring 6 cups of water to a rolling boil in a medium pot. Add 1 tablespoon coarse sea salt to the boiling water.

    Add 1 cup edamame (in pods) to the boiling water. Return to a boil and cook 4–5 minutes for fresh, or 5–6 minutes for frozen, until pods are bright green and tender but still slightly firm. Taste one pod to check doneness.

    Reserve 1/4 cup of the cooking water (optional) then drain the edamame in a colander and immediately transfer to a bowl for seasoning or to an ice bath for a few seconds to stop cooking if you prefer firmer beans. Drain well.

Spicy garlic topping (serve hot)

    Make the spicy garlic oil

    While the edamame cooks, warm 1 tablespoon neutral oil (or sesame oil for nuttiness) in a small skillet over medium-low heat. Add 2 teaspoons minced garlic and cook gently, stirring, 30–45 seconds until fragrant and lightly golden — do not burn.

    Add 1 teaspoon chili flakes (or 1 teaspoon tobanjan or a pinch more chili paste if using) and stir 10–15 seconds to bloom the spice in the oil. Remove from heat.

    Stir in 1 teaspoon soy sauce, 1 teaspoon rice vinegar or lemon juice, and 1 teaspoon sugar or honey if using. If the mixture seems dry, add 1–2 tablespoons of the reserved cooking water to loosen it into a saucy glaze.

    Toss the hot drained edamame with the spicy garlic mixture so the pods are evenly coated. Sprinkle with 1 teaspoon toasted sesame seeds and 1 teaspoon fine salt or flaky sea salt to taste. Serve immediately.

Sea salt option (simple)

    If you prefer the sea-salt style, after draining the hot edamame, transfer to a serving bowl and sprinkle 1 teaspoon coarse or flaky sea salt. Toss to distribute evenly.

    Serve with an optional lemon wedge to squeeze over just before eating.
