Drunken Noodles Recipe

    Whisk together soy sauce, dark soy sauce, oyster sauce, fish sauce, light brown sugar, water, and chili paste (if using) in a small bowl until sugar dissolves. Set aside.

Noodles & prep

    If using dried wide rice noodles, soak according to package until pliable but still slightly firm (about 20–30 minutes). If using fresh, gently separate and loosen them so they do not clump.

    Pat protein dry and slice thinly across the grain if using meat. Season protein with half the salt and pepper.

    Beat eggs lightly with the remaining salt and pepper in a small bowl.

Cooking

    Heat pan

    Heat a large heavy skillet or wok over high heat until very hot. Add 1 tablespoon of vegetable oil and swirl to coat.

    Cook protein

    Add the seasoned protein in a single layer. Stir-fry until just cooked through and slightly browned (2–4 minutes depending on thickness). Transfer protein to a plate and set aside.

    Scramble eggs

    Return the pan to high heat, add another 1 tablespoon oil. Add minced garlic and sliced shallot; stir for 15–20 seconds until fragrant. Pour in beaten eggs and scramble quickly until just set but still soft. Push eggs to one side of the pan.

    Stir-fry vegetables

    Add the mixed vegetables and scallions to the empty side of the pan. Stir-fry for about 1–2 minutes until vegetables start to soften but remain crisp-tender.

    Combine noodles

    Add the loosened rice noodles to the pan, distributing them evenly. Pour the prepared sauce over the noodles. Using tongs or two spatulas, toss everything together to coat the noodles and heat through. If the pan looks dry, add 1–2 tablespoons water to help loosen and create a glossy coating. Continue tossing 1–2 minutes so noodles absorb sauce.

    Finish

    Return the cooked protein and any accumulated juices to the pan. Add bean sprouts and basil leaves. Toss quickly for 30–45 seconds until bean sprouts are just warmed and basil is wilted but still bright. Taste and adjust seasoning with more fish sauce or soy if needed.

Serve

    Divide the drunken noodles among plates. Garnish with extra basil, additional bean sprouts if desired, and lime wedges. Serve immediately while hot.
