    Boil water

    Bring 6 cups of water to a vigorous boil in a medium saucepan over high heat.

    Once water is boiling, add 1 cup tapioca pearls slowly and stir immediately to prevent sticking.

    Return to a rolling boil, then reduce heat to medium-high to maintain a steady simmer. Cook uncovered for 20–30 minutes, stirring occasionally, until pearls are soft and chewy with a slightly translucent center. Exact time depends on brand—check package for recommended cook time and test a pearl for doneness at 20 minutes.

    Rest pearls

    After cooking, remove the saucepan from heat, cover with a lid, and let the pearls sit for 10–15 minutes to finish cooking and become chewy.

    Rinse and sweeten

    Drain the pearls into a colander and rinse briefly with warm water to remove excess starch. In a small bowl, dissolve 3 tablespoons brown sugar in 2 tablespoons hot water to make a quick syrup; add the drained pearls to the syrup and toss to coat. Let them sit in the syrup while you prepare the tea (keeps pearls sweet and soft).

Tea Base

    Heat water

    Bring 2 cups water to a near-boil (just off boiling, about 200°F / 93°C) in a small pot or kettle.

    Brew tea

    Place 3 teaspoons of black tea leaves (or 3 strong black tea bags) into a heatproof container. Pour the hot water over the tea and steep for 4–6 minutes for a robust brew. Longer steeping yields stronger flavor—aim for 5 minutes for milk tea.

    Strain and sweeten

    Strain the loose leaves or remove the tea bags. While the tea is hot, stir in 1 tablespoon granulated sugar if you prefer a sweeter base. Allow the brewed tea to cool for 5–10 minutes (tea should be warm, not boiling, before mixing with milk and ice).

Milk Tea Assembly

    Prepare milk mixture

    In a measuring cup or small pitcher, combine 1 cup whole milk and 2 tablespoons sweetened condensed milk. Stir until well combined. If you want a creamier or richer drink, substitute half-and-half or increase condensed milk slightly.

    Taste a tablespoon of the brewed tea mixed with the milk mixture. If additional sweetness is needed, add up to 2 tablespoons simple syrup or more brown sugar syrup used with the pearls, and stir until dissolved.

    Divide the syrup-soaked tapioca pearls between two tall glasses (about 1/4 to 1/2 cup pearls per glass depending on preference). Add a handful of ice cubes to each glass. Pour the cooled brewed tea over the ice, filling each glass about three-quarters full. Top off with the milk/condensed milk mixture, stirring gently to combine. Adjust milk-to-tea ratio to taste (classic ratio is roughly 2 parts tea : 1 part milk).

    Insert wide straws and serve immediately so the pearls remain soft and chewy. If serving later, keep pearls in their syrup at room temperature (not refrigerated) for up to 2 hours; refrigeration can harden them.
