Quick Pickled Red Onion (if making)
Make quick pickle
Combine apple cider vinegar, water, sugar, and salt in a small bowl or jar. Stir until sugar and salt dissolve. Add thinly sliced red onion, press down so slices are submerged, and let sit at room temperature for at least 15 minutes (can refrigerate up to 24 hours). Drain excess liquid before using.
Assemble & Grill Sandwich
Prep bread and butter
Spread softened unsalted butter evenly on the outside face of both bread slices. This side will contact the skillet and create a golden crust.
Layer sandwich
Place one slice of bread butter-side down on a cutting board. On the interior face, spread the blueberry balsamic jam evenly across the bread. Top jam with slices of brie distributed to cover most of the bread (about 3 oz). Drape prosciutto slices over the brie. Spoon the green goddess dressing over the prosciutto in a thin layer (about 2 Tbsp). Scatter the arugula evenly, then add the pickled red onion. Finish with the remaining bread slice, interior side down, butter side up.
Grill sandwich
Heat a heavy skillet or griddle over medium-low to medium heat. Place assembled sandwich in the skillet and press gently with a spatula or a heavy pan. Cook 3–4 minutes until the bottom is golden brown and the cheese begins to soften. Carefully flip the sandwich and cook an additional 2–4 minutes until the second side is golden and the brie is melted. If the bread browns before the brie melts, lower the heat and cover the skillet briefly (30–60 seconds) to help cheese soften without burning the bread.
Rest and slice
Transfer sandwich to a cutting board and let rest 1–2 minutes to allow cheese to settle. Slice diagonally and transfer to plate with chosen side.
Plating & Serving
Serve the toasted brie and prosciutto sandwich warm with your choice of side (mixed greens tossed lightly with vinaigrette, potato chips, or fries). If desired, pass extra blueberry balsamic jam or green goddess dressing on the side.
Notes: Use ripe but not overly runny brie for easier handling. If your brie wedge is very thick, shave into thinner slices to ensure even melting. Adjust amount of prosciutto and dressing to taste.
