Prepare the Broth
Start by making the base of your soup.

In a large pot, add the pork bones and cover with 1500 ml of water. Bring to a boil over medium heat.

Once boiling, reduce the heat to low and let simmer for about 30 minutes.

Cook the Noodles
Prepare the rice vermicelli noodles.

In a separate pot, bring water to a boil. Add the rice vermicelli noodles and cook according to package instructions (usually about 3-5 minutes).

Once cooked, drain the noodles and rinse under cold water to stop the cooking process. Set aside.

Prepare the Fish
Cook the fish that will be added to the soup.

In a pan, heat a little oil and sauté the chili peppers until fragrant.

Add the fish and cook until it's done, seasoning with a bit of salt and pepper. Set aside.

Assemble the Soup
Combine all components into a delicious bowl of bún nước lèo.

Once the broth is ready, strain it to remove the bones and solids.

In serving bowls, place a portion of the rice vermicelli noodles.

Ladle the hot broth over the noodles.

Top with the cooked fish, fresh herbs, and lime wedges.
