Cooking the Pasta

Boil Water
Bring a large pot of salted water to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente (usually about 8-10 minutes).

Drain Spaghetti
Reserve 1 cup of pasta water, then drain the spaghetti.
Preparing the Sauce

Cook Pancetta
In a large pan over medium heat, cook the pancetta until crispy, about 5-7 minutes.

Mix Egg Mixture
While the pancetta cooks, whisk together the eggs, grated Parmesan cheese, and black pepper in a bowl.
Combining Ingredients

Remove Heat
Once the pancetta is cooked, remove the pan from the heat.

Toss Spaghetti
Add the drained spaghetti to the pan with pancetta and quickly toss to combine.

Add Egg Mixture
Pour the egg mixture over the hot pasta, and quickly toss to ensure the eggs coat the spaghetti without scrambling.

Adjust Sauce Consistency
If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.
Serving

Serve immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
