Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

Make Dough
In a large mixing bowl, whisk together flour and salt. Create a well in the center and add the yeast mixture along with olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Knots
Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 6-8 inches long, then tie into a knot.

Prepare for Baking
Place the knots onto a greased baking sheet, leaving some space in between each knot. Let them rise for another 20-30 minutes.
