    Prepare the Dough

    In a large bowl, combine the flour, sugar, salt, and mix well. Add in the butter and rub it into the flour until the mixture resembles coarse crumbs.

    Mix Wet Ingredients

    In a separate bowl, whisk together the egg yolks and wine (or vinegar). Add this mixture to the flour mixture and knead until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

    Roll and Cut Dough

    After chilling, roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut into circles using a round cutter or glass.

    Fry the Shells

    Heat the oil in a deep pan to 350°F (175°C). Wrap each dough circle around a metal cannoli form and secure the ends with a little water. Fry in hot oil until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Ricotta Filling

    Prepare the Filling

    In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Add Mix-ins

    Fold in the chocolate chips and chopped pistachios until evenly distributed.

    Fill the Cannoli

    Using a piping bag, fill the fried cannoli shells with the ricotta filling. Dust with powdered sugar before serving.
