For the Calamari

Prepare the Calamari
Clean the calamari thoroughly. Cut the bodies into rings and leave the tentacles whole. Pat dry with paper towels.

Mix the Coating
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Toss the calamari pieces in the flour mixture until well coated.

Fry the Calamari
In batches, carefully add the coated calamari to the hot oil. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the fried calamari hot with lemon wedges on the side.

Add Tomatoes and Spices
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and red pepper flakes. Bring to a simmer.

Simmer
Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.

Finish the Sauce
Once the sauce has thickened, stir in the chopped parsley before serving.
