Queso Preparation

    Melt the Cheeses

    In a medium saucepan over medium heat, combine the smoked gouda cheese and cream cheese. Stir until melted and smooth.

    Add Tomatoes and Chipotle

    Stir in the diced tomatoes with green chilies and chopped chipotle peppers in adobo sauce. Mix well.

    Add Milk and Seasonings

    Pour in the milk and add the garlic powder, cumin, salt, and black pepper. Stir continuously until the mixture is well combined and heated through.

    Adjust Seasoning

    Taste the queso and adjust seasoning with additional salt and pepper as needed.

Tortilla Chips Preparation

    Prepare Tortillas

    Cut each corn tortilla into wedges (about 6 wedges per tortilla).

    Heat Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Working in batches, add the tortilla wedges to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain. Sprinkle with salt while still hot.
