For the Jerk Chicken

    Marinate the Chicken

    In a bowl, mix together jerk seasoning, olive oil, garlic powder, salt, and black pepper. Rub the mixture all over the chicken thighs and let marinate for at least 30 minutes, preferably overnight.

    Cook the Chicken

    Preheat the grill or oven to medium-high heat. Grill or bake the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

For the Salad

    Prepare the Salad Ingredients

    While the chicken is cooking, wash and chop the mixed greens, bell peppers, red onion, carrots, and jalapeño. Slice the bell peppers and carrots into thin strips, and finely chop the red onion and jalapeño (remove seeds for less heat).

    Assemble the Salad

    In a large salad bowl, combine the mixed greens, bell peppers, red onion, carrots, and jalapeño. Toss gently to combine.

For the Jalapeño Lime Cilantro Dressing

    Make the Dressing

    In a blender, combine fresh cilantro, jalapeño, lime juice, olive oil, honey, and salt. Blend until smooth. Taste and adjust seasoning if necessary.

Final Assembly

    Serve the Dish

    Slice the grilled jerk chicken and place it over the prepared salad. Drizzle with jalapeño lime cilantro dressing before serving.
