Prepare the Syrup

    Make the Ginger Syrup

    In a small saucepan, combine the granulated sugar and water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved.

    Once the sugar is dissolved, add the grated ginger, lime juice, vanilla extract, and cayenne pepper. Stir well to combine.

    Simmer

    Let the mixture simmer for about 10 minutes on low heat to allow the flavors to meld. Remove from heat and let cool.

    Strain the Syrup

    Once cooled, strain the syrup through a fine mesh sieve into a clean jar, discarding the solids.

Assemble the Drink

    In a large pitcher or bowl, combine the cooled ginger syrup with the club soda. Stir gently to mix without losing carbonation.
