Method

Cooking the Rice and Beans

    Rinse and Cook Rice

    Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the broth is absorbed.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Black Beans and Seasonings

    To the skillet, add 1 cup of canned black beans (drained and rinsed), 1 cup of coconut milk, 1 teaspoon of cumin, 1 teaspoon of paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.

    Prepare Tofu (if using)

    If adding tofu, cube 1 block of firm tofu and heat a separate non-stick skillet over medium heat. Add the tofu cubes and sauté for about 10-12 minutes until golden brown and crispy on all sides. Season with salt and pepper to taste.

    Prepare Chicken (if using)

    If adding chicken, in the same way, heat a skillet over medium heat. Add the diced chicken breast and cook for about 6-8 minutes or until fully cooked and no longer pink in the center. Season with salt and pepper to taste.

Serving the Dish

    Combine and Serve

    Once the rice is cooked, fluff it with a fork. Serve the black bean mixture over the rice. If using, top with sautéed tofu or chicken. Garnish with fresh cilantro and lime wedges, if desired.
