Preparation of Caribbean Black Beans

    Prepare the vegetables

    Dice the red bell pepper, green bell pepper, onion, and garlic into small pieces.

    Cook the black beans

    In a saucepan over medium heat, combine the canned black beans (drained and rinsed), diced red bell pepper, green bell pepper, onion, garlic, cumin, paprika, salt, black pepper, and lime juice. Stir well and cook for about 10-15 minutes until heated through and vegetables are tender.

Preparation of Smoked Gouda Chipotle Queso

    Melt the cheeses

    In a medium saucepan over low heat, combine the smoked Gouda cheese, cream cheese, and milk. Stir continuously until the cheeses are melted and the mixture is smooth.

    Add chipotle and seasoning

    Stir in the chipotle peppers in adobo sauce, garlic powder, and salt. Continue to cook for another 2-3 minutes until all ingredients are well integrated and heated through.

Assembly

    Prepare the chips

    On a large serving platter, spread out the tortilla chips evenly.

    Top with beans and queso

    Spoon the Caribbean black beans mixture generously over the tortilla chips. Drizzle the smoked Gouda chipotle queso on top.

    Add optional toppings

    If desired, slice the jalapeño, tomato, and green onions. Sprinkle these toppings over the nachos along with your choice of salsa.
