Plantain Chips Preparation

    Peel and Slice the Plantains

    Using a sharp knife, carefully peel the green plantains. Cut them into thin slices, about 1/8 inch thick, using a mandoline or knife.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of plantain into it; if it sizzles, it's ready.

    Fry the Plantain Slices

    Working in batches, carefully add the plantain slices to the hot oil. Fry for about 3-4 minutes, or until they are golden brown and crispy. Avoid overcrowding the pan.

    Drain and Season

    Once fried, use a slotted spoon to remove the plantain chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

    Mix the Dip Ingredients

    In a small bowl, combine the mayonnaise, Sriracha sauce, lime juice, garlic powder, and salt. Stir well until all ingredients are fully incorporated.

    Taste the dip and adjust the seasoning if necessary, adding more Sriracha for heat or salt if desired.
