Grilled jerk chicken or jerk tofu with sautéed fresh vegetables & grilled pineapple in our house alfredo sauce. Served over spinach fettuccine.

Preparation

    Marinate Chicken or Tofu

    In a large bowl, combine jerk seasoning, olive oil, lime juice, and minced garlic. Add the chicken thighs or tofu cubes, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare Vegetables

    Wash and slice bell peppers, zucchini, carrot, and red onion. Set aside.

    Prepare Pineapple

    Slice fresh pineapple into rounds or half-moons, and set aside.

Cooking

    Cook Protein

    Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes on each side or until fully cooked (internal temperature of 75°C/165°F). For tofu, grill for about 5-7 minutes on each side until golden brown. Remove from grill and let rest.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced vegetables and sauté for 5-7 minutes until they are tender but still crisp. Season with salt and pepper to taste.

    Grill Pineapple

    On the same grill, add the pineapple slices and grill for 3-4 minutes on each side until they have nice grill marks. Remove and set aside.

    Make Alfredo Sauce

    In a saucepan over medium heat, melt butter. Stir in heavy cream and bring to a simmer. Gradually add grated Parmesan cheese, garlic powder, salt, and pepper. Stir until the sauce thickens slightly.

    Cook Fettuccine

    Cook spinach fettuccine according to package instructions in a large pot of salted boiling water. Drain and set aside.

Assembly

    Combine and Serve

    In a large serving bowl, combine the cooked fettuccine, sautéed vegetables, and alfredo sauce. Toss gently to combine. Top with grilled jerk chicken or tofu and grilled pineapple slices. Serve immediately.
