Cooking the Rice

    In a medium saucepan, combine the Jamaican brown rice, water, and salt. Bring to a boil over high heat.

    Once boiling, reduce the heat to low, cover, and let it simmer for approximately 40-45 minutes or until the rice is tender and the water is absorbed.

Sautéing Vegetables

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté the Onion and Garlic

    Add the chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onions are translucent.

    Stir in the diced red and yellow bell peppers. Cook for another 3-4 minutes until slightly softened.

    Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.

    Drain and rinse the canned black beans, then add them to the skillet. Stir to combine.

Seasoning and Combining
