Nine Mile Recipe

Grilled jerk chicken or jerk tofu with ginger, fire roasted tomatoes, jalapeños, squash, & zucchini. Sautéed with white wine & butter. Tossed with linguine or served with basmati rice. Finished with spring onions.

Preparing the Protein

    Marinate the Protein

    If using jerk chicken, marinate the chicken pieces in jerk seasoning for at least 1 hour. If using jerk tofu, press the tofu to remove excess moisture, then marinate in jerk seasoning for at least 30 minutes.

    Grill the Protein

    Preheat the grill to medium-high heat. Grill the marinated chicken or tofu for about 6-8 minutes on each side, or until fully cooked (165°F for chicken). Remove from heat and let it rest.

Cooking the Vegetables

    Sauté the Vegetables

    In a large skillet, melt butter over medium heat. Add ginger and sauté for 1-2 minutes until fragrant. Then add jalapeños, squash, and zucchini, cooking for about 5-7 minutes until they start to soften.

    Add Tomatoes

    Pour in the can of fire roasted tomatoes and stir well. Allow the mixture to simmer for an additional 5 minutes.

Combining Ingredients

    Cook the Pasta or Rice

    While the vegetables are simmering, cook the linguine according to package instructions. Alternatively, rinse and cook the basmati rice according to package instructions.

    Combine with White Wine

    Add the white wine to the sautéed vegetable mixture, stirring to combine. Let it simmer for another 3-4 minutes to reduce the wine slightly.

    Toss Everything Together

    Once the linguine is cooked, drain it and add it to the skillet with the vegetable mixture. Toss well to combine, ensuring the pasta is evenly coated.

Serving

    Plate the Dish

    Slice the grilled chicken or tofu and place on top of the pasta. Garnish with chopped spring onions and serve hot.
