Grilled jerk chicken or jerk tofu with bell peppers, fire roasted tomatoes, squash, & zucchini. Sautéed with white wine & butter. Tossed with linguine. Finished with spring onions. Please specify heat level.

Marinate the Protein
If using chicken, marinate the chicken thighs in jerk seasoning for at least 1 hour (or overnight for more flavor). If using tofu, press the tofu to remove excess moisture and marinate in jerk seasoning for at least 30 minutes.

Prepare the Vegetables
Chop the bell peppers, yellow squash, and zucchini into bite-sized pieces. Slice the spring onions, keeping the white and green parts separate.

Grill the Protein
Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken or tofu for about 6-8 minutes per side, or until fully cooked (internal temperature of 165°F for chicken). Remove from heat and let rest.

Sauté the Vegetables
In a large skillet, melt the butter over medium heat. Add the white parts of the spring onions and sauté for 1 minute. Then add the bell peppers, yellow squash, and zucchini. Sauté for 5-7 minutes until tender.

Add Tomatoes and Wine
Stir in the fire-roasted tomatoes and white wine. Bring to a simmer and let cook for another 3-5 minutes, allowing the flavors to meld.

Serve
Serve the pasta warm, garnished with the green parts of the spring onions. Adjust seasoning if necessary and enjoy your More Fyah dish!
