Method
Tortilla Chips
- 1
Prepare Tortilla Chips
Cut each corn tortilla into 6 wedges. Heat vegetable oil in a large frying pan over medium heat.
- 2
Fry the Chips
Add tortilla wedges in batches and fry until they are golden and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer the chips to a paper towel-lined plate to drain excess oil.
Queso
- 3
Melt the Cheeses
In a medium saucepan over low heat, combine Velveeta cheese and cream cheese. Stir continuously until melted and smooth.
- 4
Add Remaining Ingredients
Stir in the diced tomatoes with chilies, jalapeños, cumin, and salt. Continue to cook for an additional 5 minutes until heated through.
Daily Hummus
- 5
Blend Ingredients
In a food processor, combine canned chickpeas, tahini, garlic, olive oil, lemon juice, and salt. Blend until smooth.
- 6
Adjust Consistency
If the hummus is too thick, add water a tablespoon at a time until desired consistency is reached.
Salsa
- 7
Prepare Salsa Options
Choose your desired salsa option: pico de gallo, corn salsa, or mild salsa. Serve in small bowls.
