Prepare the Marinade
In a large mixing bowl, combine the jerk seasoning, soy sauce, lime juice, minced garlic, grated ginger, brown sugar, vegetable oil, chopped Scotch bonnet pepper, chopped green onions, and salt. Mix well until all ingredients are fully combined.

Marinate the Chicken
Add the chicken pieces to the marinade, ensuring that they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.

Grill the Chicken
Remove the chicken from the marinade and shake off any excess. Place the chicken skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred.

Once the chicken is cooked, remove it from the grill and let it rest for 5-10 minutes before serving. This allows the juices to redistribute within the meat.
