Marinate the Protein

    Prepare the marinade

    In a bowl, combine jerk seasoning, olive oil, and lime juice. Mix well.

    Marinate chicken or tofu

    Add chicken breasts or firm tofu to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Grill the Protein

    Preheat the grill

    Preheat your grill to medium-high heat.

    Grill the chicken or tofu

    Remove the chicken or tofu from the marinade and grill for about 6-8 minutes per side, or until fully cooked. Remove from the grill and let rest.

Cook the Vegetables and Sauce

    Sauté the vegetables

    In a large skillet, heat a little olive oil over medium heat. Add bell pepper, zucchini, and red onion. Sauté for about 5-7 minutes until tender.

    Add fire-roasted tomatoes

    Stir in the fire-roasted tomatoes and cook for another 3-4 minutes.

    Add wine and jerk marinara sauce

    Pour in the white wine and jerk marinara sauce. Bring to a simmer and cook for about 5 minutes until slightly thickened.

Cook the Pasta

    Boil the linguine

    In a pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

Combine and Serve

    Toss everything together

    Slice the grilled chicken or tofu and add it to the skillet with the vegetable sauce, along with the cooked linguine. Toss everything together to coat.

    Garnish and serve

    Serve hot, garnished with chopped spring onions.
