Prepare the Proteins

    Marinate the Chicken and Tofu

    Rub jerk seasoning on jerk chicken pieces and tofu block. Allow to marinate for at least 30 minutes.

    Prepare the Tilapia and Brats

    Season tilapia fillets with salt and pepper. For Beyond Meat brats, score the sides lightly for even cooking.

    Optional Protein Preparation

    If using salmon, tuna, or mahi mahi, season with salt, pepper, and a bit of jerk seasoning.

Cook the Rice and Beans

    Cook Basmati Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of basmati rice, cover, and reduce heat to low. Cook for about 15 minutes or until the water is absorbed.

    Heat Black Beans

    In a small pot, heat canned black beans on medium heat until warmed through, about 5 minutes. Season with salt and pepper to taste.

Grill the Vegetables and Proteins

    Grill the Zucchini

    Slice zucchini into thick strips and toss with olive oil, salt, and pepper. Grill on medium-high heat for about 5-7 minutes per side.

    Grill the Proteins

    Grill the marinated jerk chicken, tilapia, vegan brats, or tofu on medium-high heat for about 6-8 minutes per side or until cooked through.

    Fry Plantains

    Slice plantains diagonally and fry in a pan with hot oil until golden brown, about 2-3 minutes per side.

Prepare the Salsa

    Roast the Jalapeño and Pineapple

    On a grill or under a broiler, roast the jalapeño and pineapple until charred, about 10 minutes. Chop finely and mix together.

Assemble the Bowl

    Build the Bowl

    In a bowl, start with a base of basmati rice, add black beans, grilled zucchini, your choice of protein, fried plantains, and top with jalapeño pineapple salsa and chimichurri sauce.
