Method

Prep & Marinade

    Trim and score

    Pat the chosen protein dry with paper towels. Trim excess fat and lightly score thicker parts of steaks or fish to help marinade penetration.

    In a bowl, combine vegetable oil, soy sauce, lemon juice, minced garlic, black pepper, paprika, cumin, salt, and chili flakes (if using). Whisk until emulsified. This is the marinade/seasoning for the protein.

    Place your chosen protein in a shallow dish or resealable bag. Pour most of the marinade over the protein (reserve about 1 tbs for basting). Rub the marinade into all surfaces. For chicken legs and goat meat, marinate at least 2–4 hours (preferably overnight). For steaks and fish, marinate 30 minutes to 2 hours.

Prepare Sides

    Parboil baby potatoes or wedges in salted water about 8–10 minutes until just tender. Drain and toss with 1 tbs oil, salt and pepper. Roast or pan-fry at 425°F (220°C) or in a skillet until golden and crisp, about 15–20 minutes.

    Prepare rice according to package directions and keep warm. For fried rice, stir-fry cooled cooked rice with a bit of oil, salt, and optional soy sauce and vegetables until heated through.

    Slice bell peppers, onions and zucchini. Toss with 1 tbs oil, salt and pepper. Grill or pan-sear the vegetables until lightly charred and tender, about 6–8 minutes total. Keep warm.

    Toss mixed salad greens, tomatoes and cucumber with a light vinaigrette and chill until serving.

Cook the Protein

    Chicken legs (if chosen)

    Preheat oven to 400°F (200°C). Sear chicken legs skin-side down in an oven-safe skillet over medium-high heat 4–5 minutes until skin is golden. Flip and spoon reserved marinade over them. Transfer skillet to oven and roast 20–30 minutes until internal temperature reaches 165°F (74°C). Baste once with reserved basting sauce (butter + honey if using) for the last 5 minutes for a glaze.

    Beef sirloin steaks (if chosen)

    Bring steaks to room temperature. Heat a heavy skillet or grill to high. Sear steaks 3–4 minutes per side for medium-rare (adjust time for thickness). During the last minute, add 1 tbs butter to the pan and spoon over steaks. Rest steaks 5–7 minutes before slicing against the grain.

    Chicken breast steaks (if chosen)

    Preheat grill or skillet over medium-high heat. Cook chicken breasts 6–8 minutes per side until internal temperature reaches 165°F (74°C). Baste with reserved marinade or butter-honey glaze during the last few minutes. Rest 5 minutes before slicing.

    Tilapia fillets (if chosen)

    Heat 1 tbs oil in a nonstick skillet over medium-high. Pat fillets dry, season with marinade. Cook 3–4 minutes per side until opaque and flakes easily. Finish with a squeeze of lemon and a pat of butter. Do not overcook.

    Goat meat (if chosen)

    For tender goat, sear pieces in a hot pan until browned, then braise: add 1 cup water or stock, cover and simmer gently 45–60 minutes until tender (alternatively use a pressure cooker 20–30 minutes). If you prefer grilled goat, marinate longer (overnight) and grill over medium-high heat, about 6–8 minutes per side depending on thickness. Baste with reserved marinade and finish with butter glaze if desired.

    If preparing a mixed-meats platter, time proteins so they finish together: start slow-cooking/braising items (like goat or large chicken legs) first, then grill or pan-sear quick items (tilapia, steaks), and keep finished items loosely tented with foil while finishing others.

Baste, Rest & Plate

    Prepare the basting/finishing sauce by melting butter and stirring in honey (if using). Brush this over proteins in the last 1–2 minutes of cooking or immediately after removing to rest to give a glossy finish.

    Let all cooked proteins rest 5 minutes (10 minutes for large cuts). Slice steaks or breasts as desired.

    On a large serving platter, arrange rice (or a bed of greens), place the chosen protein(s) prominently, add potato wedges, grilled vegetables and a small bowl of dipping sauce. Garnish with chopped parsley and lemon wedges. Serve salad on the side.

    Provide a variety of dipping sauces (barbecue, spicy mayo, chimichurri) so guests can mix and match with different meats.
