Make simple orange syrup
Combine 1 cup granulated sugar and 1/2 cup water in a small saucepan over medium heat. Stir gently until the sugar dissolves and the mixture comes to a low simmer. Do not boil vigorously; a gentle simmer for about 3–4 minutes will create a clear syrup.

Add the orange zest to the pan during the simmer and continue to infuse for 2 minutes while keeping the heat low so the oil in the zest is released into the syrup.

Remove the pan from heat and let the syrup cool for 5 minutes. Strain out the zest into a heatproof bowl or measuring cup to leave a smooth syrup.

Stir in 3/4 cup fresh orange juice, 1 tablespoon fresh lemon juice, 1 teaspoon citric acid, and 1/4 teaspoon orange extract (if using) into the warm-but-not-hot syrup. Mix until completely combined. Taste and adjust: add up to 1/2 teaspoon more citric acid if you prefer brighter tartness, or 1–2 teaspoons more sugar dissolved in a tablespoon of hot water if you want it sweeter.

Allow the syrup to cool to room temperature, then refrigerate for at least 30 minutes if you plan to serve cold immediately. The syrup will keep in an airtight container in the refrigerator for up to 5 days.

Fill a large pitcher or individual glasses with ice if desired. For each serving (about 1 cup final beverage), combine 1/4 cup chilled orange syrup with 3/4 cup cold carbonated water. For the recipe quantities given (syrup yields roughly 1 1/4 cups), mix about 3/4 cup soda water per 1/4 cup syrup — total will make approximately 4 servings as listed.
