Prepare and Shake

    Chill glass

    Place a Collins or tiki glass in the freezer (or fill with ice water) to chill while you assemble the cocktail.

    Combine ingredients

    In a cocktail shaker, add white rum, fresh pineapple juice, fresh lime juice, coconut cream, orange liqueur, and simple syrup. Add 4 ice cubes to the shaker.

    Dry shake (optional)

    For a silkier texture with coconut cream, give the mixture a brisk shake without ice for 10 seconds to emulsify.

    Shake with ice

    Add the ice cubes if you did a dry shake, or proceed directly, then shake vigorously for 12–15 seconds until well chilled and slightly frothy.

Assemble and Garnish

    Prepare glass

    Remove the chilled glass from the freezer or dump the ice water. Fill the glass about three-quarters full with crushed ice (about 1 cup).

    Strain

    Double-strain the shaken cocktail into the prepared glass over the crushed ice to remove any large ice shards and pulp. Use a Hawthorne plus fine mesh strainer if available.

    Float dark rum

    Carefully pour 0.5 oz dark rum over the back of a bar spoon so it floats on top of the drink, creating a layered look and richer aroma.

    Garnish and finish

    Garnish the cocktail with a pineapple wedge on the rim, a lime wheel, and a maraschino cherry. Lightly grate a pinch of nutmeg over the top if desired. Serve with a straw and a small swizzle stick.
