Prepare the Beef
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent. Add the beef tenderloin and sear until browned on all sides.

Cook the Filling
Add the diced tomato and bell pepper to the skillet. Season with salt and black pepper. Pour in the beef broth, cover, and let it simmer for about 45 minutes or until the beef is tender.

Assemble the Piroshki
Preheat the oven to 200°C (400°F). Roll out your dough and cut it into circles. Place a spoonful of the beef filling in the center of each circle, top with a small dollop of béarnaise sauce, then fold the dough over and seal the edges.

Place the assembled piroshki on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
