    Prepare the Crème Brûlée Mixture

    In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and stir in the vanilla extract.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. Gradually add the cream mixture to the egg yolks, whisking constantly.

    Prepare the Bananas Foster

    In a skillet, melt the butter over medium heat. Add the sliced bananas and cook for 1-2 minutes until slightly caramelized. Add the dark rum and brown sugar, and cook for an additional 2-3 minutes, stirring gently. Remove from heat.

    Mix Together

    Gently fold the bananas foster mixture into the crème brûlée mixture. Pour the mixture into ramekins.

    Bake

    Place the ramekins in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 325°F (160°C) for 30-35 minutes, or until set.

    Cool and Chill

    Remove the ramekins from the water and let them cool. Refrigerate for at least 2 hours.

    Prepare the Crumble

    While the crème brûlées are chilling, crush the vanilla wafers into small crumbs. Set aside.

    Caramelize the Top

    When ready to serve, sprinkle a thin layer of granulated sugar over the top of each crème brûlée. Using a kitchen torch, caramelize the sugar until it forms a crispy crust.

    Top each crème brûlée with a sprinkle of vanilla wafer crumble before serving.
