    Prepare the Beef Tenderloin

    Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper.

    Sear the Beef

    In a large skillet over medium-high heat, melt the beef tallow. Once hot, sear the beef tenderloin on all sides until browned (about 3-4 minutes per side).

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Let it rest for 10 minutes before slicing.

    Make the Shallot Jam

    In a separate saucepan, add the chopped shallots and cook over medium heat until softened and caramelized (around 10-15 minutes). Stir occasionally to prevent burning.

    Prepare the Potato

    Peel and chop the potatoes into small cubes. Boil them in salted water until tender (about 15 minutes), then drain and mash with a bit of salt and butter.

    Cook the Green Peas

    Blanch the green peas in boiling water for 2-3 minutes, then drain and toss with truffle oil, salt, and pepper.

    Slice the beef tenderloin and serve on a plate with a dollop of foie gras butter on top, a side of mashed potatoes, shallot jam, and the truffle-infused green peas.
