    Pickle the Radish

    In a small saucepan, bring 200 ml of water to a boil. Add dried hibiscus flowers and simmer for 10 minutes. Strain and mix with vinegar and salt. Allow the mixture to cool, then add sliced radishes and let them pickle for at least 30 minutes.

    Prepare the Quinoa Crisp

    Rinse quinoa under cold water, then cook in salted boiling water for about 15 minutes until tender. Drain and spread on a baking sheet. Bake at 180°C (350°F) for about 15-20 minutes until crispy.

    Make the Coriander Yogurt

    Mix yogurt with finely chopped fresh coriander, a splash of olive oil, salt, and black pepper. Adjust seasoning to taste.

    Prepare the Beef Tartare

    Finely chop the beef tenderloin and mix with olive oil, egg yolk, salt, and black pepper. Form into a small patty.

    Assemble the Dish

    On a plate, place the beef tartare patty, top with hibiscus pickled radish, fresh mango cubes, and salsa macha. Serve with quinoa crisp and a dollop of coriander yogurt.
