Preparation and Baking

    Prepare the Dough

    In a bowl, dissolve the sugar in warm water and sprinkle the yeast over it. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Rolls

    Punch down the risen dough and divide it into 8 equal pieces. Shape each piece into a ball and place them on a greased baking sheet, leaving some space between each roll. Cover and let them rise for another 30 minutes.

    Bake the Rolls

    Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes, or until golden brown.

    Make Garlic Chive Butter

    While the rolls are baking, melt the unsalted butter in a small saucepan over low heat. Add the minced garlic and chopped chives, stirring until fragrant, about 2-3 minutes. Remove from heat.

    Serve

    Once the rolls are baked, remove them from the oven and brush with the garlic chive butter. Sprinkle the grated Parmigiano Reggiano on top while still warm. Serve immediately.
