Preparation

    Marinate the Cucumber

    In a bowl, combine the thinly sliced cucumber, rice vinegar, sugar, salt, and sesame oil. Toss to coat and let marinate for at least 30 minutes in the refrigerator.

    Prepare the Ginger Mayonnaise

    In a small bowl, mix together mayonnaise, grated ginger, and lime juice. Set aside.

Frying Oysters

    Prepare the Oysters

    Shuck the Wellfleet oysters and place them in a bowl with buttermilk. Let them soak for 15 minutes.

    Coat the Oysters

    In a separate dish, mix together flour, salt, and black pepper. Dredge each oyster in the flour mixture, then dip in the buttermilk again, and finally coat with panko breadcrumbs.

    Fry the Oysters

    In a deep skillet or pot, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated oysters in batches and fry until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
