Prepare the Chicken
Preheat the oven to 200°C (400°F). In a bowl, mix Dijon mustard, olive oil, minced garlic, salt, black pepper, and chopped lavender. Rub this mixture all over the chicken halves.

Roast the Chicken
Place the chicken halves in a roasting pan, skin side up. Roast in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 75°C (165°F) and the skin is crispy.

Prepare Pommes Robuchon
In a pot, boil the diced potatoes in salted water until tender. Drain and return to the pot. Add heavy cream and unsalted butter, then mash until smooth and creamy. Season with salt to taste.

Roast the Bush Beans
While the chicken is roasting, toss the trimmed bush beans with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for the last 15 minutes of the chicken's cooking time until tender.

Serve
Remove the chicken from the oven and let it rest for 10 minutes. Serve the roasted chicken with pommes robuchon and roasted bush beans on the side, drizzled with any pan jus.
