Preparation of Gnudis

Prepare the Dumpling Mixture
In a large mixing bowl, combine the sheep’s milk ricotta, all-purpose flour, egg, grated Parmesan cheese, salt, and black pepper. Mix until a soft dough forms.

Shape the Gnudis
Dust your hands with flour and take small portions of the dough, rolling them into balls about the size of a golf ball. Place the formed gnudis on a lightly floured baking sheet.

Chill the Gnudis
Refrigerate the gnudis for at least 30 minutes to help them firm up before cooking.
