Prepare the Gnocchetti
Bring a large pot of salted water to a boil. Add the gnocchetti and cook according to package instructions until al dente. Drain and set aside.

Roast the Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the oyster mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and black pepper. Remove from heat and set aside.

Char the Corn
In the same skillet, add the corn kernels and another tablespoon of olive oil. Cook on high heat until the corn is slightly charred, about 4-5 minutes. Remove from heat and set aside.

Cook the Smoked Pork Belly
In the skillet, add the smoked pork belly and cook until crispy, about 4-5 minutes. Remove from heat.

Combine Ingredients
In a large bowl, combine the cooked gnocchetti, roasted mushrooms, charred corn, and crispy smoked pork belly. Drizzle with the remaining tablespoon of olive oil and toss to combine. Adjust seasoning with salt and black pepper.

Plate the gnocchetti mixture and sprinkle with grated Parmigiano-Reggiano and fresh parsley before serving.
