    Prepare the Fries

    Cook the fries according to package instructions or your preferred method until golden and crispy.

    Season the Fillet Medallions

    Season the fillet medallions with salt and black pepper on both sides.

    Sear the Fillet

    In a skillet, heat olive oil over medium-high heat. Add the fillet medallions and sear for about 3-4 minutes on each side for medium doneness.

    Add Bleu Cheese

    During the last minute of cooking, top each medallion with a portion of bleu cheese and cover the skillet to allow the cheese to melt slightly.

    Prepare the Plate

    Once cooked, remove the fillet medallions from the skillet and let them rest for a couple of minutes. On a plate, place a bed of fresh arugula.

    Serve the Dish

    Place the crusted fillet medallions on top of the arugula, drizzle with truffle demi-glace, and serve alongside the fries.
