Prepare the Hush Puppies
In a bowl, mix 1 cup of cornmeal, 0.5 cup of all-purpose flour, 1 tsp of baking powder, 0.5 tsp of salt, and 1 cup of buttermilk. Stir in 1/2 cup of diced onion and 1/4 cup of chopped green onions. Drop spoonfuls into hot oil and fry until golden brown, about 3-4 minutes.

Prepare the Catfish
In a shallow dish, combine 1 cup of cornmeal, 0.5 cup of all-purpose flour, 1 tsp of paprika, 0.5 tsp of cayenne pepper, 1 tsp of salt, and 0.5 tsp of black pepper. Dip each catfish fillet into 1 cup of buttermilk, then coat with the cornmeal mixture.

Fry the Catfish
In a large skillet, heat 2 cups of vegetable oil over medium heat. Once hot, carefully add the coated catfish fillets. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.
