Preparation

  1. 1

    Prepare the Ingredients

Chop the lamb shoulder into cubes, finely chop the onions, and chop the tomatoes. Mince the garlic and ginger.

Cooking

  1. 2

    Fry the Spices

In a large pot, heat a tablespoon of oil over medium heat. Add the cumin seeds and fry until fragrant, about 1 minute.

  2. 3

    Sauté Onions

Add the chopped onions to the pot and sauté until they are golden brown, about 5-7 minutes.

  3. 4

    Add Garlic and Ginger

Stir in the minced garlic and ginger and sauté for another 2 minutes until fragrant.

  4. 5

    Add Lamb

Add the cubed lamb to the pot and brown on all sides, about 5 minutes.

  5. 6

    Add Tomatoes and Spices

Stir in the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook for another 5 minutes until the tomatoes soften.

  6. 7

    Add Liquids

Pour in the coconut milk and water. Bring the mixture to a boil, then reduce heat to low.

  7. 8

    Simmer the Curry

Cover the pot and let it simmer for 1 hour, or until the lamb is tender and the gravy thickens.

  8. 9

    Finish with Garam Masala

Stir in the garam masala and let it cook for another 5 minutes.

Serving

  1. 10

    Garnish and Serve

Serve the lamb curry hot, garnished with fresh cilantro and lemon wedges on the side.
