Method

Preparation

  1. 1

    Marinate the Chicken

In a bowl, mix the chicken pieces with yogurt, ginger-garlic paste, biryani masala, turmeric powder, red chili powder, coriander powder, and 1 tsp of salt. Let it marinate for at least 30 minutes.

  2. 2

    Soak the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.

Cooking

  1. 3

    Fry the Onions

In a large pot, heat the cooking oil or ghee over medium heat. Add the sliced onions and fry until golden brown. Remove half for garnishing later.

  2. 4

    Cook the Chicken

Add the marinated chicken and chopped tomatoes to the pot with the remaining onions. Cook for about 10-15 minutes until the chicken is browned and cooked through.

  3. 5

    Add Water and Rice

Add 4 cups of water and the remaining salt to the pot. Bring it to a boil. Once boiling, add the soaked and drained rice. Stir gently, then cover with a tight-fitting lid.

  4. 6

    Simmer

Reduce the heat to low and simmer for about 20-25 minutes or until the rice is fully cooked and the water is absorbed.

Serving

  1. 7

    Garnish and Serve

Fluff the biryani with a fork. Garnish with fresh coriander leaves, fried onions, and lemon slices. Serve hot with raita or salad.
