    Prepare the Chiles

    Remove stems and seeds from the dried guajillo and ancho chiles. Soak them in hot water for about 15-20 minutes until soft.

    Make the Adobo Sauce

    In a blender, combine the soaked chiles, garlic, cumin, oregano, and 1 cup of vegetable broth. Blend until smooth.

    Cook the Mushrooms

    In a large pot, heat a splash of vegetable broth over medium heat. Add the chopped oyster mushrooms and cook for about 5-7 minutes until they start to brown.

    Combine Everything

    Add the adobo sauce and remaining vegetable broth to the pot with the mushrooms. Bring to a simmer and cook for 15-20 minutes. Season with lime juice, salt, and black pepper to taste.

    Prepare the Tacos

    Warm the corn tortillas in a skillet. Fill each tortilla with the birria mixture and top with sliced red onions.

    Serve the vegan birria tacos with extra lime wedges on the side for drizzling.
