Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash and scrub the potatoes, then pierce them several times with a fork. Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.

Prepare the Toppings

While the potatoes are baking, cook the bacon in a skillet until crispy. Drain on paper towels and chop into pieces. Prepare the crema, cheeses, green onions, and salsa.

Assemble the Papas Norteñas

Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork. Add a tablespoon of butter to each potato, then layer with crema, gouda, mozzarella, chopped bacon, and top with green onions.
