Prepare the Corn

In a large skillet over medium heat, add the sweet corn kernels and cook until they are slightly charred, about 8-10 minutes. Stir occasionally to ensure even cooking.

Make the Herb Oil

In a small bowl, combine the olive oil and chopped cilantro. Set aside.

Prepare Garlic Aioli

In another bowl, mix the minced garlic, mayonnaise, and lime juice until well combined. Season with salt and black pepper to taste.

In a large serving bowl, combine the charred corn, herb oil, and garlic aioli. Toss to coat all the corn evenly.

Top the esquites with crumbled queso fresco and a sprinkle of chili powder. Serve warm or at room temperature.
