    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until fork-tender, about 10-15 minutes. Drain and set aside.

    Cook the Carne Asada

    Season the carne asada with salt and pepper. Grill or pan-sear it over medium-high heat until cooked to your desired level (about 4-5 minutes per side for medium). Let rest and then slice into thin strips.

    Sauté the Poblano Peppers

    While the carne asada is resting, heat the olive oil in a skillet over medium heat. Chop the poblano peppers and add them to the skillet. Sauté until they are softened, about 5-7 minutes.

    Combine Ingredients

    Add the cooked potatoes and sliced carne asada to the skillet with the poblano peppers. Stir well to combine and cook for another 2-3 minutes to heat through. Adjust seasoning with salt and pepper as needed.

    Serve the papas alambre topped with guacamole and garnished with chopped cilantro.
