    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onions, bell peppers, and jalapeños. Sauté until softened, about 5 minutes.

    Combine Ingredients

    In a large bowl, combine the sautéed vegetables, diced chicken, shredded cheddar cheese, Monterey Jack cheese, salt, and black pepper. Mix well.

Cooking

    Assemble the Quesadillas

    Place a corn tortilla on a clean surface. Spoon a generous amount of the cheese and chicken mixture onto half of the tortilla. Fold the other half over to cover the filling.

    Cook the Quesadillas

    In the same skillet, heat over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

    Serve

    Remove from the skillet and let cool for a minute before cutting into wedges. Serve with salsa, sour cream, or guacamole.
