Start by thinly slicing the carne asada against the grain. Dice the onion, chop the cilantro, and slice the poblano peppers in half to remove the seeds.

In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the pan.
