For the Mozzarella Sticks

    Prepare the Cheese

    Freeze the mozzarella cheese sticks for at least 30 minutes. This helps them to hold their shape during frying.

    Set Up the Breading Station

    In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and a mixture of breadcrumbs, parmesan cheese, garlic powder, dried Italian herbs, salt, and pepper in the third bowl.

    Bread the Cheese Sticks

    Remove the cheese sticks from the freezer. Dip each stick first into the flour, shaking off excess, then into the egg, and finally coat thoroughly with the breadcrumb mixture. Place them on a plate.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cheese Sticks

    Carefully add the breaded mozzarella sticks to the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy on all sides. Remove with a slotted spoon and drain on paper towels.

    Sauté the Garlic

    In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add the canned crushed tomatoes, dried oregano, salt, pepper, and sugar to the saucepan. Stir well and bring to a simmer.

    Finish the Sauce

    Let the sauce simmer for about 10 minutes, stirring occasionally. Just before serving, stir in the fresh basil.
