Mashed Potatoes

Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Coating

In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

  3. 3

    Coat the Chicken

Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

  4. 4

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the oil over medium-high heat to 350°F (175°C). Use a thermometer to check the oil temperature.

  5. 5

    Fry the Chicken

Carefully add the coated chicken pieces to the hot oil, working in batches if necessary. Fry for about 12-15 minutes per side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

  6. 6

    Drain and Rest

Once cooked, transfer the chicken to a wire rack or a plate lined with paper towels to drain excess oil. Allow to rest for a few minutes before serving.

Mashed Potatoes

  1. 7

    Boil the Potatoes

In a large pot, add the quartered potatoes and cover with cold water. Add a pinch of salt and bring to a boil over high heat. Reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.

  2. 8

    Drain the Potatoes

Once cooked, drain the potatoes in a colander and return them to the pot.

  3. 9

    Mash and Mix

Add the butter, milk, salt, and black pepper to the drained potatoes. Using a potato masher or fork, mash the potatoes until smooth and creamy. Adjust seasoning to taste.

  4. 10

    Serve

Serve the mashed potatoes alongside the crispy fried chicken.
