Meatballs

    Prepare the Meatball Mixture

    In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper.

    Form the Meatballs

    Mix the ingredients together until well combined, then form into meatballs about 1 inch in diameter.

    Cook the Meatballs

    In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove and set aside.

    Sauté Onions and Garlic

    In the same skillet used for the meatballs, add olive oil and heat over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer.

    Combine Meatballs with Gravy

    Return the meatballs to the skillet and reduce heat to low. Cover and let simmer for 30 minutes, allowing the flavors to meld.

    Stir in the chopped fresh basil just before serving.

    In a small bowl, combine the ricotta cheese, chopped parsley, chopped basil, and salt. Mix well until combined.

Grilled Ciabatta

    Preheat a grill or grill pan over medium heat. Slice the ciabatta loaf in half lengthwise.

    Brush the cut sides with olive oil and grill for about 2-3 minutes on each side until golden and toasted. Rub the grilled sides with the halved garlic clove for flavor.
